<p>Sweet Potato Tater Balls</p>
<p>Ingredients:<br />
- 1 Lb. (16oz) Frozen Sweet Potato Fries<br />
- 1/4 tsp salt<br />
- 1/4 to 1/2 tsp of Corn Starch<br />
- Pinch of Brown Sugar</p>
<p>Directions:<br />
1. Finely dice fries or shred in a Cuisinart or Food Processor<br />
2. Mix all ingredients in a bowl<br />
3. Form into balls (or Tots)<br />
4. Fry in a deep fryer in 350 degree oil for 3 min. or until golden. Can also be fried on stove in a skillet with oil.<br />

		<description><![CDATA[If you love going to the Fair, you must love the]]></description>
			<content:encoded><![CDATA[<p>If you love going to the Fair, you must love the food. But there&#8217;s only two problmes; the Fair is only around during the month of October, and the food is really expensive.</p>
<p>Brad Priebe opened The Stand, a casual dining restaurant on McKinney Avenue, where he serves stadium and Fair food with flair, and for more afordable prices.</p>
<p><span id="more-243"></span>He showed me in the kitchen (btw, the restaurant has a cool, retro airline RV as decor) and we cooked up a few dishes. We started with a Nathan&#8217;s hot dog that is wrapped in bacon, flash fried, and then smothered in homemade chili and mac n cheese, and topped with a tearjerker onion ring. Next we made a grab n go frito pie, loaded with chili, cheese, sour cream and jalapenos.</p>
<p>But the nost decadent thing we made (and ate) was a fried Twinkie. It&#8217;s dunked in pancake batter and fried, then drizzled with chocolate and raspberry sauce. Yum!</p>

			<content:encoded><![CDATA[<p>The Stand in Uptown is turning your concession stand favorites into comfort food with a fun twist.</p>
<p>“We wanted to do a place that was comfort foods done fun with different twists on it. All of our menu items are a little bit off the norm. We’ve taken the traditional fun foods that you might see at concession stands, at stadiums, at the fair and done a different twist on it using the highest quality ingredients to make it a more memorable dining experience,” said owner Adam Alfia.</p>
<p>One of those options, the Big Cheese Grilled Cheese Sandwich, looks so gourmet you’d never think it was a riff off comforting fair food.</p>
<p>There’s also the Mac Daddy Dog &#8212; a hot dog topped with macaroni and cheese, chili and a jumbo onion ring.</p>
<p><span id="more-227"></span></p>
<p>&#8220;We wanted to have fun, portable foods. All of our foods are extremely portable. If you want, you can take it, walk down the street and eat whatever it is you ordered without any problem,” said Alfia.</p>
<p>But when you dine-in you’re never alone, due to the eye-catching Airstream trailer cut in half.</p>
<p>“We wanted to take the food truck idea and bring it inside and we were playing around with the theme, the Airstream trailer came to mind and we said to ourselves wouldn’t it be cool if people could order off an airstream, but how do you do that indoors? So, we bought a 1967 Airstream, had it cut in half and then used half of it, as you see behind me, to place your order and to pick up your order and took the other half and made it a salad bar and drink station,” said Alfia.</p>
<p>There also the patio outside if you’re looking for a second place to enjoy a culinary twist on your concession favorites.</p>

			<content:encoded><![CDATA[<p>The Stand recently opened at 2916 McKinney, just where the street splits to one-way traffic. The name is a reference to a burger or hotdog &#8220;stand,&#8221; and inside two Airstream trailers serve as such. The patio that wraps around the front of the restaurant could be a cool spot to hang on a nice day.</p>
<p>The menu is a field-guide to the glorious and gluttonous side of American junk food, and the Mac Daddy Dog (photo above) just might be the defining item. It starts with a Jumbo Nathan&#8217;s dog wrapped in bacon, lightly fried with mac n&#8217; cheese, topped with chili, cheese and two Tearjerker onion rings all served on a hoagie bun ($5.50).</p>
<p><span id="more-221"></span></p>
<p>Other &#8220;Doggies&#8221; include The Mutt (just a plain old dog), a Dirty Dog (chili and cheese), a Dog Pile (topped with brisket and queso), a Sloppy Dog (Chicago style), Coney Corny Dog, a Brew Brat and a Spicy Brew Brat. All cost around $5.50 and sides are separate.</p>
<p>Standwiches include chicken, falafel, and The Big Cheese (crusty Italian with Brie, Muenster, French fried onions and a fried egg). They also have five different burgers, wings, nachos and pizza all to be washed down with a variety of import and domestic beers or margaritas. Oh, and fried Twinkies.</p>
<p>Parking is in back, so just swing around to the right just after you&#8217;ve passed it on McKinney. They&#8217;re open late on Friday and Saturday nights.</p>

<p>Executive chef Kellie Doyle puts a high-end swanky twist on classic American fare at The Stand. You can get frito pie served in the frito bag, sweet potato tater balls, but the piece de resistance is the Mac Daddy Dog. The Mac Daddy Dog is a Nathan’s hotdog wrapped in bacon and lightly fried with mac and cheese. All this food will have you licking your lips and exclaiming, “Mm-mm-good!”</p>
<p>Not only will the food entice you to The Stand, but the prices will as well. Everything on their menu is under $10! The Stand is a great, economical hot spot for a casual date night or a night out with friends.</p>
